Syllabus
Microbial growth:
Understand the concept of exponential growth and kinetic laws, in particular Monod's law.
Nutritional requirements and environmental impact:
Study the impact of factors such as temperature, pH, redox potential and food matrix on the growth of microorganisms.
Control and destruction of microorganisms:
Thermal methods for controlling microorganisms, kinetics of microorganism destruction.
Sterilization scales, Bigelow and Ball methods.
Other athermal techniques for controlling microorganisms.
Introduction to predictive microbiology and modeling:
Discover the basics of predictive microbiology and modeling (challenge tests, DLC).
