Syllabus
Microorganisms of industrial interest and their products:
- lactic acid bacteria, yeasts, molds
- production of high value-added substances (amino acids, vitamins...)
- bioconversion (coupling microbiological and chemical processes)
Nutrition and trophic types in bacteria:
- nutrient and energy requirements of bacteria
- trophic types, metabolic diversity...
- main fermentation pathways
- application to specific microflora in food matrices
- microorganism interactions
